This recipe is healthy, delicious and super easy! All you need to do is throw all the ingredients in the slow cooker and the work is done for you!
Ingredients
- 1 medium diced onion
- 3 cloves minced garlic
- 1 diced red bell pepper
- 1 large sweet potato
- 1 lb 93% lean ground chicken
- 1 lb 95% lean ground beef
- 2 tsp smoked paprika
- 2 tsp dried oregano
- 2 tsp kosher salt
- 1 tsp ground cumin
- 2 tsp chili powder
- 1 (16 oz) can petite diced tomatoes
- 1 cup reduced sodium chicken broth
- 2 diced avocados
Optional: the original recipe also called for 2 seeded jalapeños; 1/4 tsp red pepper flakes; and 4 oz goat cheese. I don’t like spicy food, so I skipped the jalapeños and red pepper flakes. I love goat cheese and avocados, but I actually forgot to top off the chili when I was finished!
Directions
Put all the ingredients except for the avocados and (optional) goat cheese in the slow cooker. Cook on low heat for 8 hours. Note that the original recipe said to break up the ground meat with a wooden spoon when done. However, I would break up the meat before putting it into the slow cooker.
Serve with avocado on top.
