I love peanut butter. And I love pumpkin season. So when I saw this recipe, I had to try it.
Ingredients
- 1 cup peanut butter
- 1 cup pumpkin puree
- 2 cups rolled oats
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1 tsp cinnamon
- 1 tbsp vanilla extract
Optional: 1/3 cup white chocolate chips. Now, I have a major sweet tooth and I added these in, but I have to say, it was way too sweet. I’d pass on this next time.
Note: the original recipe said to adjust the peanut butter and pumpkin puree to taste. I used equal parts PB and puree, but next time I’d cut back on the PB to 1/2 cup.
Directions
Combine all ingredients into a mixing bowl and stir by hand.
Spread batter into a foil-lined and spayed 8 x 8 or 9 x 9 pan.
Bake at 350F for 22-25 minutes or until toothpick inserted in center comes out clean.
The bars may still look undercooked, but they’ll continue to set as they cool. Cool very well before digging in.
