If you know me, you know I have a major sweet tooth. No matter how full I may be, it seems like I have a separate stomach reserved just for dessert. Unfortunately, my sweet tooth doesn’t agree with my hips and thighs, so I love any sweet I can indulge in without the guilt. Enter my new obsession: banana-anything “ice cream.” This is so easy to make and is fun to experiment with. All you need are a couple frozen bananas and your pairing of choice. Here are some pairings I’ve tried so far.
1. Slice up 2 bananas and place on a flat baking sheet & parchment paper to freeze overnight. You can also place the sliced up bananas in a sandwich bag, but they tend to freeze together, which will make step 2 harder.
2. Place the frozen sliced bananas in a food processor (or blender) and grind until you have a smooth consistency. At first, the banana will look like little crumbs (kind of like Dippin Dots), and you may need to take a spatula to scoop down the perimeter of the food processor, but if you keep grinding, you’ll reach the desired consistency. It should look like this:
3. Add in some coconut flakes, to taste, then grind some more.
4. Enjoy!
